he iconic Dolphin Hotel in Surry Hills is truly one of Sydneyʼs hospitality venues with a pulse. It is a hatted restaurant, a wine bar, a casual eatery and meeting place. The various spaces in the art filled venue provide a cornucopia of fun options.

FIB went to meet and chat with The Dolphin’s Sommelier, James Hird, to hear all about what inspires him and his approach to wine.
