All the way from the shores of Bondi Beach, Icebergs Dining Room and Bar will “pop-up” at Splendour in the Grass 2019 to introduce a fancy dining option to the usual pedestrian festival fare. Restaurateur and fashion designer, Maurice Terzini, wants to combine food, fashion, art, and music to provide a pop-up experience to its customers.
Diners will be able to escape the crowds of the festival to enjoy a three-course menu from Icebergs executive chef, Monty Koludrovic, inspired by Terzini’s Italian background. The team from Three Blue Ducks, which has a farm and a restaurant in nearby Ewingsdale, will also participate in the meal preparation together with Koludrovic.
Some of the dishes available during the festival include nodini di mozzarella (mozzarella knots); grilled pickled octopus; risotto with saffron, crab, and celeriac; twice- cooked free-range chicken with ginger sauce; and candied macadamia and chocolate tiramisu.
Regarding the drinks menu, it has been put together by Icebergs sommelier, James Hird, and Matt Whiley from Scout Sydney. The guests will be greeted with a drink made with Smirnoff Infusions, a spirit infused with fruit and botanical extracts. Beer is from the Belgian brewery, Hoegaarden.

Tickets for Icebergs x Splendour in the Grass cost $148.50 and will be available from 9 am on Tuesday, June 18. Ticket holders will also have exclusive access to the Italo Dining and Disco Club party from 11 pm to 2 am on Sunday night.
Icebergs sessions will be at 7 pm on Friday, July 19 and at 12 pm, 3 pm, and 6 pm on Saturday, July 20 and Sunday, July 21. Diners will need to register with Visa Checkout before buying their tickets from Moshtix.
